Late last year I decided to make the move from non-stick to stainless steel cookware. I spent hours researching and reading reviews, but in the end didn't want to make a decision without actually trying the cookware first. This pan had a great price on Amazon and the size worked as a replacement for one of my non-stick Chef's Pans. The pan is beautiful. It is quite heavy - more than likely due to the 5 layers of metal. I need to use both of my hands to tip it - the helper handle is absolutely necessary! It heats up quickly and cooks food evenly. I would have loved to purchase the entire Acc-U-Core set, but just couldn't justify the cost. I have since purchased other Calphalon and Cuisinart stainless steel pans and love them as well, but this pan probably has them beat as far as cooking food evenly - by a smidge. The copper layer really does seem to make a difference. Most of the consumer Reviews tell that the "Calphalon AcCuCore 4 Qt. Chef's Pan with Cover" are high quality item.
