It was time to fill in a gap in my kitchen tools, a stainless steel dutch oven. I won't say that money was not a concern but I wanted a nice one, as I planned to use it a lot, and so I was willing to pay whatever I needed. I started my journey here on Amazon looking at all the different models but I needed to be able to touch them to know which one was right for me. Thanks to BB&B I got to see and compare all the models I was interested in, and even a few I didn't know existed. I can honestly say I learned a lot and I know I made the right choice. Initially I was really leaning towards the Calphalon 5-qt. Tri-Ply Stainless Steel Dutch Oven, Stainless Steel but once I held it and compared it to a few other pans, it became ordinary and even a little cheaply made (especially the lid). Don't get me wrong, it's a very nice pan when compared to an el-cheapo Walmart pan, it just doesn't stand up well against say ... its new sibling the AccuCore 5qt. dutch oven. The look and feel of the new AccuCore series impresses. The slightly curved walls and larger radius bend at the base not only look nice but looked useful, and the glass lid is very solid. Still I hesitated. Of course in the end, a side-by-side comparison made the choice easy, the AccuCore was the clear winner for me.

I ended up using the pan for every meal over the first weekend of ownership, 8 times to be exact. I found the pan to heat very quickly and evenly. Making a curry one evening really showed off how the slight curve on the walls and the broad bend to the base made wooden spoon use a treat. I also really like the nice solid, heavy lid. In all this cooking I only came away with small 2 complaints:

1) The handles slowly heat to the point where you can not move the pan without pot holders. I understand that the pan is designed to transfer heat evenly throughout whole interior and it is hard to isolate the handles from this heat, but I still assumed/hoped they would stay cool enough to use bare-handed. During short uses you can move the pan around without too much fuss, but on higher heats or long simmers they, they get hot enough to burn you. Again I realize the reason for this but I wonder if there is a handle design that would have helped keep them cooler. I'm curious how other pans in this class compare.

2) The only other complaint, if you can call it that, is that the lid is still settling in even after 8 uses. It *tinks* as it heats and cools. The first time it did it I was a little worried and then I remembered other glass lids doing the same when they were new, so I assume it is temporary as everything settles in.

So far this pan has been a treat to use and I am glad I opted to spend the extra money on it. I look forward to many years of reliable service.

Edit: I like having all my pans be able to share lids and so I tried them all on each other. I measured and found out the lid should fit any pan with a 10" interior measurement. First I tried my Calphalon Contemporary Stainless 8-Quart Pot with Glass Lid and 2 Inserts and it fits well, actually slightly better than the original lid (it measures 1/8" less). I also tried my Emeril stainless lid and it fits both the Calphalon pans very nicely.
